I had my best meal of oysters ever just a few weeks ago, at a place I plan on writing about here soon. But I came across a piece to share that couldn’t wait.
David Cecelski is one of my favorite North Carolina writers. I found him while working on a graduate degree at East Carolina. My advisor, Alex Albright, taught a great class called Research for Writers. He buried us in work, but I learned more in that class about research than all my years put together.
One of the MANY assignments offered an option to follow and write about a food blog on the NC Folklife website. That’s how I found Cecelski and enjoyed his writings about food culture all over North Carolina.
He recently featured an essay on his site called “The Oyster Shuckers Song.” I’ve posted the link below. It’s a short history about oyster harvesting in the state and about his love for the bivalves.
The storms of this past fall put a dent in the North Carolina harvest this year, making the delicacies harder to come by. I’m looking forward to roasting some in the hard before the summer, or at the very least pulling up to a local oyster bar. But more on that later.
